Blueberry Muffins a la Salt & a big FAT hangover !

Well last night was a rare event where we managed to secure a baby sitter (thanks to my beautiful sister) and so to not waste such an occasion my frenchman and I had a night of far too many boissons and a heeeellll- uv-a- lot of fun ! I can even recollect that at one stage I pulled out my running man dance, a dance I honed to perfection during my university years...

All things being equal, I now must balance my child free, french infused night of drinks and dancing, with having to manage a day with 2 toddlers and a big fat hangover...

I'm embracing my hangover in the only way that I know and that's just to EAT... then EAT and eat and EAT a little more... Hopefully I can steel a nap with the little frenchies later today...

Jack & I cooked blueberry muffins this morning...

I thought I'd be clever and do what Donna Hay did and sprinkle the top with sugar...
so I did that...
except...
with Salt ... DAMMIT!!!!!!

oh well, we can salvage the inner muffin I suppose...
so lesson learnt: Don't cook when excessively hungover!












































and I think this reaction below from Laurent probably sums up well what Donna Hay's blueberry muffins taste like when you top them with salt!
















Here's the recipe... if you can avoid switching sugar for salt, you'll see that they're actually super yummy!

Blueberry Muffins
Recipe by Donna Hay 
(makes 12)

Ingredients

2½ cups (375g) self-raising flour, sifted 
1 teaspoon baking powder 
1 cup (220g) caster sugar 

½ cup (125ml) vegetable oil
1 egg
½ cup (125ml) milk
1 teaspoon vanilla extract
300g fresh or frozen blueberries
granulated sugar, for sprinkling

Method

1. Preheat oven to 180°C (350°F). 
2. Place the flour, baking powder and sugar in a bowl. Place the oil, egg, milk and vanilla in a separate bowl and whisk to combine. 
3. Pour the liquid ingredients into the dry ingredients and mix until just combined. Add the blueberries and mix to combine.
